What You Can Learn in Homebrew Shops
Article by Peter Waterman
There are many homebrew shops around the country and if you have the chance to visit one we advise you to do so. When you don’t have the opportunity to visit one in real life you can also find them online. And these online homebrew shops are also a great source of knowledge. But what are the things you can learn at these shops?
You can find enthusiastic brewers at homebrew shops.
Most of the homebrew shops sell supplies and ingredients but they also offer a place to gain knowledge from other home brewers. Almost all shop owners brew themselves, have a homebrewery on the side and most know all the ins and outs of the home brewing process. They often have small production facilities and most like to show it to you and explain how they work. The online homebrew shops often have pictures and even video’s online to show you how they do it and sometimes they have have video’s of the whole brewing process.
Professionals on a small scale
Most owners of homebrew shops started just like you, they bought a home brewing kit or received one as a gift and just started doing it. They gained more experience and started with brewing special blends for friends and friends from friends and before they knew they had a licensed microbrewery and started their (online) homebrew shops. They will remember the time when they were just starting to brew and most of them are more than willing to help out and give advice.
Quality is in the numbers
You might think that the best ingredients can be bought at local homebrew shops but most of the time it is better to buy ingredients online. Local homebrew shops need to buy at a large scale and sometimes the ingredients don’t get sold quick enough and the ingredients are not as fresh as you would like. Most online homebrew shops don’t have stock they deliver direct from the producer this means you get super fresh ingredients and especially with hops that is very important.
Most home brewers will tell you that the taste is all in the hops, and they are pretty accurate with that assumption Because unprocessed hops dry fairly quickly and can turn the taste of the brew almost rancid, almost all local homebrew shops sell pellets or plugs, this will have a much longer shelf life. It is important that all your ingredients are as fresh as you can get.
History lessons at your homebrew shops
The process of homebrewing works has basically remained unchanged for hundreds of years. And may be the brewing equipment is more modern today the old brewing methods have remained the same. Most homebrew shops have a small section with some historical knowledge because of the Prohibition of Alcohol in the United States between 1920 and 1933. Home beer brewing was left out until a new law was passed in 1978. And even now you are only allowed to produce 100 gallons per year for every adult over 21 in the household, with a maximum of 200 gallons a year allowed by law. If you want to brew more you need a license and the owners of homebrew shops can tell you all about that because the need to have one themselves.

Tips for Designing Your Own Beer Recipe
Article by Dominick Famiano
Perhaps the greatest thrill in homebrewing is that innate desire of the individual brewer to create a truly unique, signature beer. This process of recipe design comes easy to some, but it can present quite a challenge to others. Sometimes it’s good to get back to basics and remind ourselves that all beer essentially contains just a few key ingredients: malt, hops, yeast, and water.
We know that the malt provides the fermentable sugars, and the yeast converts these sugars to alcohol, while the hops work to balance the sweetness of unfermented sugars. That’s the most basic process. It’s how we bring these and additional ingredients together that determines the characteristics of the finished beer. Take the time to really familiarize yourself with these ingredients. For example, it’s fine to read about the unique flavors imparted by different varieties of hops, but you should also focus on the aroma of the hops as you use them.
Seek out existing recipes calling for ingredients you have not yet used. Recreate these recipes, and keep a specific journal of each brewing session. This journal should include a list of the ingredients, starting and finishing gravities, fermentation
temperature, and all important dates and times such as time of boil, pitching, fermentation, secondary racking, and bottling. ProMash is just one of many software programs available to assist you with this task. I only mention it because it is what I use. If you would prefer, a pen and notebook will work just fine.
Once you have found a recipe you enjoy, go back to your journal. Try to find ways to make it even better, and make it your own. Perhaps there are other flavors, enjoyable to you but not traditionally found in beer, that you can bring to this recipe. Begin the process of experimentation. Recently, I discovered a wheat beer recipe that I enjoy very much. My goal now is to recreate it, slightly lighter in body and with a hint of lemon and basil. Take the liberty to do the same with your beer. Just remember to keep the batch sizes small during the experimentation process. That way, if you don’t care for the finished product, not much is lost.

Home Beer Making – Guides To Matching The Right Beer To The Meal
Article by Ryan M. Hooper
Beer can be used to compliment the food in the similar way as wine pairs with food. Beer adds more flavors of both the brew and the meal. Not all the beers can go with all the food, so you have to carefully pair the food and beer together to enjoy the perfect taste. Today you can find different flavors of beer, which gives lot of choices in terms of pairing them with your favorite dish.
There are certain basic rules, which are very simple that you should follow when it comes to combining beer and food together. Be aware of the impact beer will have on your taste. Choose the beer that compliments the flavor of your food. When first starting home beer making, it is good for beginners to pair light meals with light beer and heavy meals with dark beers. There are certain wines for certain foods and in the same way you can select certain beer that compliment certain flavor dishes. Let us take a look at few guidelines that will help us decide the perfect beer to go with perfect food.
- Lighter dish like salads and salmon can be complimented with light bodied Kolsh but other dishes of salmon, tuna and other fatty, oily fishes can be best complimented with acidic, hoppy beers like Pilsner. Beers like Pilsner or American Pale Ales make a perfect match for fatty rich food, chips or cheese.
- Barbecued ribs can be paired with full-bodied Brown Ale or Porter Beer. Other grilled or seared meats taste great with the Caramel Malts in an Oktoberfest beer. Even Brown Ales make an excellent pair with roasted pork, smoked sausage and barbecues. Warm meat meals with gravy like Shepherd’s Pie go well with a Cream Stout or a drink of heavy Porter.
- Porters work well with smoked meats, especially bacon, and compliment chocolate, espresso and coffee-flavored desserts, as well as soft, creamy cheeses
- Spicy Indian heavy dishes can be complimented with Pale Ale or Pilsner to get a refreshing break. The spicy and fatty flavors of certain dishes can be easily cut by beer. Malty, sweet beers go well with Mexican or other spicy dishes.
- Light bodied Lagers is a perfect beer that goes very well with the spicy Thai and Pan Asian food. This beer can also compliment the Latin and Mexican food by slicing the heat and spice of the dishes. The oily heavier dishes pair best with the bitter hops of an IPA.
You can find similar ingredients or flavors present in both food and brewing. But you can also contrast the food and beer by pairing unlike matches. The complexity of flavors will contrast and bring out the flavors in both in the beer and the meal. Having unlike matches like Pale Ale with smoked fish or a stout with fruit desserts can surely add fun to your meal. You can also experiment with pairing the international beers from the same region of food. Originating from the same place, they often complement each other well. For example the light Mexican beers go well with Mexican foods and the Japanese-brewed lagers make a good pair with sushi. Find the right pairs by checking the way the flavors combine and complement each other.

Three Common Mistakes Made Home Winemakers
Article by Ian Hugh Scott
Have you been disappointed with the way your homemade wine has turned out? I know quite a number of people who have not been pleased with their results. Sometimes it’s off flavors. Or worst of all, wine turning into vinegar. Here are some common mistakes that home winemakers often commit which could result in something your not all that proud of:
Mistake #1 – Not Sanitizing Equipment
This is quite possibly the biggest and most often made mistake of home winemakers. Just because a batch of wine turned out fine previously, and you didn’t spend the extra few minutes sanitizing your equipment doesn’t mean you’ll be so lucky every time. It only takes a few minutes and can save a lot of frustration and feelings of wasted time to mix up a solution of potassium metabisulfite and water (3 Tablespoons per gallon of water) and use it on your equipment, primary fermentation pail and carboy.
Mistake #2 – Assuming Fermentation is Complete
Have you ever had bottles of wine that exploded or the corks suddenly started popping out? This is caused by pressure build up of carbon dioxide in the bottles, usually due to yeast that are consuming any remaining sugar. Some people think that by adding sulfite and potassium sorbate, they can stop the fermentation before it’s complete and end up with an off dry, semi-sweet or sweet wine. It is unlikely that by adding sulfite and sorbate that a fermentation will stop. Adding sorbate will simply prevent yeast from reproducing and restarting a fermentation.
Let your wine ferment completely. If you wanted to end up with something sweeter, add a sweetener after the fermentation has completed.
Mistake #3 – Drinking Wine Too Soon
Although 4 week http://homewinery.info/subject.php?c=22&catname=Beer%2FWine+Kit+Reviews“>winemaking kits appeal to those who want to have wine quickly in order to consume it, all wines can benefit from some further aging in the bottle. Avoid drinking it for at least a week after you’ve bottled it. If you can, wait several months. After bottling, wine can suffer from bottle shock where the flavors become muted and sometimes referred to as “disjointed.” It’s a temporary condition and you will find that your wine improves if you give it some time.
Keep these mistakes in mind while you make your wines, and by avoiding them you will increase your chances of having something you will be proud to serve others.

Great Homemade Wine
Article by Bill N
Making homemade wine is a fantastic hobby that I’ve enjoyed for 13 years. You can make homemade wine for a fraction of what it would
cost you to purchase store bought wine and in these tough economic times it sure helps. There is a lot of personal gratification with the recognition by family and friends of my homemade wine. One time my wife gave a bottle of our wine to a friend of hers who served a glass of it to her husband. Her husband sampled the wine not knowing anything about it. After tasting the wine he was so impressed that he
inquired as to where she had purchased it and was totally amazed when told it was homemade. I didn’t tell this little story to blow my own
horn but to show that good quality wine can be made at home.
Another great bonus for me is my daughter now has become interested in making homemade wine and helps me with the process as does my wife. The reward in this is with life’s busy schedule it gives us some wonderful family time together which to me is very precious.
Not only is making red homemade wine a fun hobby, drinking red wine can benefit your health. Studies have shown that consuming red wine
in moderation (one to two glasses a day) has several health benefits. One of most widely documented benefits of red wine is heart health.
Researchers found that red wine inhibited the build-up of fatty material along the artery walls which helped to explain why people in France have a relatively low incidence of heart disease despite a diet rich in saturated fats. Other studies also indicated that red wine can raise HDL cholesterol (the Good cholesterol) and prevent LDL cholesterol (the Bad cholesterol) from forming. Red wine is a particularly rich source of antioxidants which studies suggest may help protect against certain cancers.
From the beginning I was successful thanks to my brother-in-law who is now in his sixties, Italian born and has been making homemade wine for most of his life. To this day he still buys the grapes and crushes them to make his red homemade wine. However, since venturing
out on my own some years ago, I now make my homemade wine from the juice as it produces a wine of almost equal quality to the grape
method and eliminates the crushing, pressing and disposing of the skins. One of the most important things that I have learned is - to make great homemade wine always use high quality juice or grapes because the quality of your homemade wine is totally dependant on this!
Red homemade wine is easier fo the beginner to make. This is the simplified explanation of how to make homemade wine from grapes:
1) Crush the grapes to extract the juice.
2) The skins and pulp are kept with the juice during fermentation to add more colour and give the wine body.
3) After the fermentation the homemade wine is then transfered to glass containers, such as demijohns.
4) Skins and pulp are pressed to extract any remaining liquid.
5) The homemade wine is given time to age and transfered several times to leave behind sediments.
6) Bottle, cork and age

Advantages and Disadvantages of Kit Winemaking
So, you are interested in making wine at home. What are the first steps? Plant a vineyard, wait several years, harvest grapes, and then make wine? Or, wait until a grape grower in your area has loads of wine grapes to harvest – probably sometime this fall?
You can certainly make wine at home this way, but for those of us who do not have the patience to wait months or even years to taste our first bottle of homemade wine, there is another way to make wine easily at any time of the year: making wine with a kit.
What are winemaking kits?
There are generally two categories of winemaking kits available for purchase from online winemaking supplies retailers. First, there are kits that include all the winemaking equipment and ingredients needed for a beginner to make their first batch of wine (usually six gallons). These are often called “winemaking starter kits.” Second, there are wine recipe kits which only include the ingredients to make wine, but none of the other supplies and equipment you will need to make wine.
What are some of the advantages of making wine using a winemaking kit?
There are several advantages. For the beginner, winemaking starter kits can provide all the tools and instructions needed to successfully produce a first batch of wine. For the more experience winemaker, recipe kits can allow one to make wine at almost any time of the year. For both beginners and experience winemakers, kits are often the cheapest way to make quality wine at home.
What are some of the disadvantages of making wine using a winemaking kit?
One of the major disadvantages is that when using recipe kits your will be limited only to the types of wine that are available with the winemaking kits. Another disadvantage is that beginners using the starter kits will quickly outgrow their starter equipment and will want to replace many of the items with more sophisticated winemaking supplies. A final disadvantage is that by relying too heavily on these kits you will miss out learning a lot about the winemaking process since they so simple to use.
All in all, however, winemaking kits provide excellent winemaking opportunities to both beginning and advanced winemakers. As long as the winemaker keeps in mind that winemaking kits are just one part of a broader winemaking experience, they should find kit winemaking to be a rewarding experience.
